My latest addiction = shredded chicken.

It is SO easy to prepare and there are hundreds of tasty recipes to use it in!

Sunday night put boneless, skinless chicken breasts in a crockpot and cover with chicken broth).  I turn it on high for 4-6 hours or you could could cook on a high for 2-3 hours then cook on low while you get your beauty sleep :)

After the chicken is cooked through simply grab two forks and start shredding… or if you are me, give it to your husband to prepare!

Here are some of my favorite shredded chicken recipes right now (simply make all of your chicken at the start of the week and use in the recipes all week long!):

- Chicken and Bean Burrito Verde

- Avocado Chicken Salad 

- BBQ Chicken Salad

- Buffalo Chicken Enchiladas
