Weekly Menu #1

My latest addiction = shredded chicken.

It is SO easy to prepare and there are hundreds of tasty recipes to use it in!

Sunday night put boneless, skinless chicken breasts in a crockpot and cover with chicken broth).  I turn it on high for 4-6 hours or you could could cook on a high for 2-3 hours then cook on low while you get your beauty sleep 🙂

After the chicken is cooked through simply grab two forks and start shredding… or if you are me, give it to your husband to prepare!

Here are some of my favorite shredded chicken recipes right now (simply make all of your chicken at the start of the week and use in the recipes all week long!):

I Heart Vegas

We had a once in a lifetime experience this past weekend at the iHeart Music Festival… The two day festival had some insane highlights… My top 5 would be: 1. Usher (he’s just that amazing) 2. Swedish House Mafia (they really pumped everyone up and put on a great show), 3. Pink (she sang while doing aerial aerobatics and overall just kicked ass), 4. Bon Jovi (I could have cared less about them when reading the line up but they really put on a great show), 5. Lil Wayne (I’ve always wanted to see him live… Check!) Other trip highlights included: eating at Barmasa, reading the epic novel Gone Girl, going to Border Grill with Jeremy’s mom, soft pretzels at the arena, and playing craps. Luckily we have more of a break until our next Vegas trip (hopefully).


Beach House

We were able to spend the weekend at Pat’s beach house and had an insanely lazy and relaxing time. We took walks, went wine tasting (which turned into tequila tasting), cooked, read and watched a LOT of TV 🙂 Kitchen tip: I pre-made some shredded chicken Thursday night by covering boneless, skinless chicken breasts with chicken broth and cooking it for 6 hours. You can just shred it with 2 forks and refrigerate it until you use it during the week! Here is a great recipe for BBQ Chicken Salad that we had Friday night – enjoy!



I think it’s safe to say that Vegas was a success! Between our overly full tummies (Sushi Roku, Mesa, Cut), amazingly refreshing drinks (Strawberry-Balsamic Vinegar Smash, Cactus Pear Margaritas, Pepido’s Revenge), a pool party with the OCD guy from Million Dollar Listing and a dance party of epic proportions with Calvin Harris and Michael Phelps, it was a weekend to remember… See you in two weeks Vegas!
